Cinco De Mayo is upon us! Don’t let this weekend pass without making this easy and delicious salsa!
SERVES 2 HUNGRY PEOPLE
(or 4 People that are mildly afraid of Salsa.)
1/4 cup lime juice
4 roma tomatoes
1/2 red onion
1 bell pepper
2 tbsp tomato paste
1/8 tsp salt and pepper
1/2 tsp cumin
2 tsp maple syrup
Cilantro as desired
Slice the onion and pepper first into dice sized pieces. Next, combine them in fresh-squeezed lime juice. This will help to “cook” the onions slightly and minimize any digestive issues. Follow steps with the jalapeno.
Next, combine the remaining ingredients and stir to combine. Taste, and adjust any seasonings to your flavor profile. Serve with warm tortilla chips!
